Citric acid (2-hydroxypropane-1,2,3-tricarboxylic acid, CAS 77-92-9) is a weak organic acid produced at industrial scale by submerged fermentation of carbohydrate feedstocks with Aspergillus niger. It is supplied as citric acid monohydrate and citric acid anhydrous, in food grade (E330, complying with BP/USP/FCC monographs) and technical grade. Citric acid is highly soluble in water, acts as an acidulant, flavour enhancer, chelating agent and preservative, and is also used at industrial scale for boiler and membrane descaling, metal cleaning and as a biodegradable builder in phosphate-free detergents.
